The Evolution of Ramen

Ramen’s origins are hazy but one story has it after Japan opened its ports to the world in the mid-1800s, a Chinese noodle dish skyrocketed in popularity with Japanese manual laborers and industrial workers looking for cheap and filling food.

After World War II, ramen’s popularity all but tanked due to famine and strict regulations on food supplies. But thanks to an illegal black market in which wheat was heavily (but secretly) traded and sold, ramen made a comeback. So, today you can find ramen in dorm rooms, kitchen cupboards and top-notch, high-end restaurants like BŌRU.
